Just uninstall what you don't want?
While a dedicated 'DOS' style OS install would be nice, and on linux is this 
quite practical, you need some of the graphic tools loaded to create user 
interfaces, so deciding on a suitable subset of components is the problem.

There are a few nice USB stick distros that might well be able to run EMC2, but 
to be honest, the LiveCD is quite compact, and if there is no network cable, 
then most of the stuff is disabled anyway?
