Have you tried contacting Intermac to see if they could get you some schematics? I think your going to want them. Unfortunately I think I've heard they aren't the easiest company to work with so you might be out of luck, but it doesn't hurt to try.
And from the pictures google brings up of "Intermac Fox 3700" machines, it certainly isn't a DOS based control. (Just because at has a text based display doesn't mean it has anything to do with DOS.)
