I don't use thunderbird, but if I switch to Adwaita, my menus lose their icons. Clearing the efreet cache fixed it for me. I think needing to clear efreet's cache sometimes is a known issue? My steps: 1) rm -r ~/.cache 2) killall efreetd 3) Open the Icon Theme settings, switch to another theme, Apply 4) Switch back to Adwaita.
