Problem was, the "friendly IT admin" didn't have a clue either. They, apparently, set up Exchange on the fly with defaults. They had zero clue about their LDAP server and assorted other things. Basically, the sites we have for Entourage and Exchange was what they used to learn more about their server. Very nice guys, they were as helpful as they could be, but they didn't really know what they were doing. They know MUCH more about their own technology now than they did yesterday morning. As of now, everything's working - well, most everything I think. They can get mail, send mail, and check names (once they found the script that told them what the mappings were). BTW, when we used a CN mapping, Entourage would quit unexpectedly. When we removed that and only used DC mappings (and once we got the correct LDAP server) Entourage happily checked names. There's either no calendaring going on, or I'm still missing something in the calendar feature. I don't know and they couldn't answer me. But, still, everyone's happy. Go figure.
