Here's how I made it work: Previously, in the smtp field I had the name of the exchange server (exchange_srv1) - same as the imap server. Apparently, they're not using exchange for smtp (even though they say they are) because when I put the fqdn in the smtp field (domain.forest.com) I was able to send mail anywhere. I don't exactly understand what went awry in Exchange Server, but at least I have the client configured and working now.
