The only thing that puts Entourage windows into the Dock is if you "minimize" them by

  1. clicking the yellow middle button at top left corner
  2. selecting "Minimize Window" in Window menu
  3. using the latter's keyboard shortcut - command-M

I suspect you are typing command-M. Back in Entourage 2001 that was the keyboard shortcut for "Send & Receive All". Apple chose command-M as the shortcut for "Minimize" for all apps in OS X, and Microsoft duly complied. Send & Receive All is now command-K, and Minimize is command-M. (If you are not typing cmd-M manually, might you have some utility such as Quickeys or iKeys which is doing it for you? You can set up schedules within Entourage itself so that's not necessary anyhow.)
