This is probably not strictly and entourage/launchbar issue...

Check and see if you have launchbar indexing your itunes library. If you do
and you happen to have a very larg itunes library, launchbar's indexing of
this library might be the issue. To fix the problem turn off automatic
background indexing of itunes.

The root of the issue is that iTunes re-writes the xml file with the library
info each time you make a change to the library and launchbar autoindexes
this file. For most people this is not a problem, but if you have a large
library (I have something like 60,000 songs) that xml file gets rather
large. Indexing this file runs the HD and can quickly eat up all your
processor cycles. 

Anyway this is easy enough to shut off. Just do a command-y in launchbar
(open configuration) and uncheck iTunes Music Library or set it to only
index at set times when you know you won't be using the computer.

Note the same issue could happen with iPhoto but you would have to have a
ton of images...
