Large format cells aren't so great for power density. You're almost certainly going to be power limited by the battery so start there and select the rest of the system to suit.
I would pay very close attention to battery cooling. A mostly enclosed 2008 vintage Thunder Sky pack with no cooling system rises more than 15 degrees Celsius when discharged at an average around 2C. It then holds it's temperature charging at C3. If you discharge it again right after charging, the temperature keeps rising!
I hear newer cells are better, but you might find with a small battery and a dump charger that you get two cycles before it's really rather hot.
It may be enough to pressurise the bottom of the box and have air flow through the slots between the cells, but you'd have to actually test that.
