and writing as an organist, there is enough choral music with organ accompaniment by English composers where, despite the fact that the part is somwhat complex, are still only written with two staves, that if called upon to do so, I would show the organ part on two staves without qualms.

This reflects the fact that English organs were built w.o pedals until well into the 19th century--and of course many of these older organs remain(ed?) in use for a long time.
