Darcy, based upon my experience I see two possible reasons to do it a shape:
first, if the expression is already a shape, all of the existing instances can be changed in one move;
second, defining the glyph as a Finale shape expression which can be modified allows for the possibility (expecially in a Jazz score) that it might be expedient to have the shape different sizes in different places.
