I also prefer to run the CVS gnuplot, and am using Fink to build and  
install on Leopard (Intel).

Below is a short script demonstrating what I do

        export GP=gnuplot-4.3.0
        cp -r gnuplot $GP
        cd $GP
        ./prepare
        cd ..
        tar cvzf $GP.tar.gz GP
        md5 $gp.tar.gz
        echo "(1) Add md5 to GPinfo"
        sudo cp GP.tar.gz /sw/src/.
        sudo vi "/sw/fink/10.5/local/main/finkinfo/sci/gnuplot-dev.info"
        sudo fink rebuild gnuplot
        sudo fink reinstall gnuplot

I called the new info and patch files gnuplot-dev.info and gnuplot- 
dev.patch.

The info file is a slight modification of the one that Fink was using.  
I changed the lines below

Version: 4.3.0
Revision: 2
...
Source-MD5: 6c5deabd12cf8904c4cb9b4712438601
PatchFile: %{Ni}-dev.patch

The "Source-MD5" line may be changed each time your build/install or  
may choose to skip that and tell fink to use the sources that are  
present even though the MD5 does not match (Fink will ask if the MD5  
does not match).

I have not needed to change the patch file, but did rename it so that  
any possible changes upstream would not effect my local install.

I have not encountered any problems with gdlib.

p.s. I began doing this more than a year ago (prior to the 4.2.4  
release) Thus my gnuplot-dev.info may no longer to a duplicate of  
Fink's. If you'd like  copy of my info file, I can provide it.
