Fink is a package manager. Meaning is "manages" the downloading of  
sources and then builds and installs applications.

The instructions for where to obtain the sources and how to build and  
install are in the info-files. The patch-files are needed to make  
changes (patches) to the sources to allow them to run on Mac OSX and./ 
or to be built/installed by Fink.

What I've done for gnuplot is to create local info and patch files to  
enable gnuplot's deverlopers sources to be built and installed in the  
same way Fink handles other packages.

For the questions regarding building gnuplot recommend you try  
gnuplot's mail list.
