For Linux, there are plenty of "hardening" projects which produce a lot of 
security tools.  You can also do a fair to good ammount of hardening 
yourself depending on how familiar you are with the system.

www.linuxsecurity.com is a good place to start looking at things.

The *BSD's are different- stability is a function of which kernel you pick 
no matter what the OS.  NetBSD used to have the fastest networking code, 
OpenBSD ships with a reasonably secure default, and FreeBSD is probably 
the most prevalent of the BSDs.

Pick the one that has the code that most meets your needs.  

Firewalling is like car buying, there are good choices for what you want 
to do, and poor choices for what you want to do.  First you have to decide 
what it is you want to do, then you can see if the vehicle meets those 
needs.
