You do not say which version of MySQL you are using, so there is no way to know what encoding options exist for you. They are different in later 4.x.x and 5.x versions of MySQL.
Gary - my apologies, I should have mentioned the MySQL version. I'm developing on the Mac localhost using MySQL 5.0.19, but the target system is on a remote server running MySQL 4.0.24.
[I only just now noticed that phpMyAdmin (v2.8.03) on the localhost displays the MySQL charset as UTF-8 on login; on the remote host phpMyAdmin (v2.6.2) that information is not shown.]
