I typically set the field that the data is being pasted into to be an auto entered calculation and use the Remove Formatting function to restore the pasted text to the field default. Just remember to set the auto enter calculation to replace existing content.

I know this can be done with a script for a specific field using the Set Field and the formatting commands, I've done that, but I'm interested in a
command that would change the style in any field of my choosing on the
layout.
