I cannot confirm this behavior here in a G5 iMac and a G5 ppc.
Have you tried this on a different machine?
What history do these fonts have? I mean have you upgraded the system
over the time from 10.0 or even from OS 9? Have you done a clean
system install sometime? Using a different language at some time may
create more than one set of fonts, which will cause problems at some
time.
The ligatures "fi" and "fl" come from the Roman font script system.
These are (if they are) usually triggered only at the beginning of a
word. The other ligatures you tried only exist in the unicode system
(utf-8, utf-16). So it is clear it is a system function and FileMaker
has nothing to do with it.
I suggest to open the FontBook.app and check your fonts. Those who
have duplicates carry a dot.
Check for Monaco and Courier and remove any duplicates first to the
desktop and then start FileMaker again to see whether this helps.
(You can only show the location for one of the duplicates at a time -
likely the used one first.)
If there should be no duplicates, remove both fonts and replace them
from your installer disk.

Yes. Not a problem in proportional fonts, but most definitely a
drawback for supposedly monospaced fonts like Courier and Monaco
(but not, curiously, Andale Mono, Bitstream Vera Sans Mono,

subject, I've been informed that American Typewriter was really not
intended to be a monospaced font, so I withdraw my complaint about
ligatures occurring there.
There is still more to check:
in OS X System preferences:
- What system language ()?
English
- what input method(s) activated in Keyboard menu tab (all should
be Off)?
Input source is listed as "U.S.". Also visible under this menu are
"Show Character Palette" and "Show Keyboard Viewer". I didn't see
anything that gave me the ability to turn any features on or off.
in FileMaker:
- what language?
On a Mac, it uses the System Preference set under "International",
which, as mentioned above, is "English".
- what default font in Preferences -> Fonts (Roman + ??)?
Roman Helvetica
- what Font options? (sync input method should be Off, Font
locking should be On)

- what FONT has the field?
As mentioned above, the only 2 fonts that seem to be affected are
Courier and Monaco — and then only for the "fi" and "fl" character
combinations, not other common ones like "ft", "ffi", or "ffl".
(The latter 2 are rendered as a stand-alone "f" followed by a 2-
byte ligature.)
