I fooled around with the problem a bit more yesterday and immediately encountered a problem I hadn't expected. It was easy to collect all the emails from one them in one place, but NOT easy to get an email, with it's headers, into text. Apparently in email (unlike in the forums where I have tried this before) the headers are kept in a separate file. Anyway, buried in other stuff right now.
