When I've used inkjet printers connected to the serial port in the past, and had a problem with it printing out a bunch of gibberish, I found that I had to turn off AppleTalk. Some non-postscript printers require AppleTalk but most do not. I'm guessing that you're not connecting to a network so you don't need AppleTalk turned on.
