My experience in using CDR is with PCs, but on that, with Easy-CD and
Direct CD you can add files one at a time. That's how I do backups, just
click to add a compressed file of my mailboxes, bookmarks, etc to a dated
folder. Each of these is only about 5MB, so I've got dozens of them on one
disk. If it's a CDRW, it acts just like a Zip drive, you can delete one or
more files and leave the rest. 

Just say "NO" when the software asks if you want to "close" the disk before
ejecting, that's when you can't add any more to it. (Note that it's
unreadable on an ordinary read-only CD drive until you close it, but reads
fine in a burner.) 

I assume Mac DirectCD has the same features.

As for Iomega Zips, at work we bought some early ones, and used them on a
daily basis for years. Then for my home PC and G3 I have internals, and
have had endless problems -- the "Click of Death" or just not working at
all, lost lots of data. Apparently QC is an issue with many later drives.
CDR is much safer and cheaper for long-term archiving.
