I think that for most people OS X is a lot more stable, but there will always be exceptions. My B&W runs OS 9.2.2 - I reckon it needs a forced restart once, maybe twice a month. I have a G3 iMac running Jaguar for just over 2 years and in that time I've had 3 or 4 kernel panics. The biggest problem with it is sluggish performance every so often and the fact that AppleWorks, often in combination with SoundStudio, has a knack of going through 0 - 100% processor utilization cycles that make the machine unusable until I restart it (which can be a long, painful process). I have a G3 iBook running Panther since April and I've had 2 kernel panics and had to force restart it 6 times. The restarts have usually been during the copying of large files via AirPort - the iBook either froze completely or the mouse would move but the GUI not respond. Trying to SSH in didn't work. This week I had a weird situation - Camino and the Finder stopped responding and the USB ports stopped working. Restarting the machine via the keyboard got the machine working fine again. I do work all three machines pretty hard, particularly the iBook - it "only" has 384MB of RAM at the moment. If I avoid tempting fate with large AirPort copies I can usually run it for 2 - 3 weeks before the machine starts thrashing the disk so much that I have to restart - memory leaks maybe? For comparison, at work I have an old Windows 98 laptop that locks up 2 - 3 times a week, an XP machine that has required a forced restart once since it was bought in October and an old Windows NT box that is my main programming machine and has blue-screened once in about 4 years.
