Well, vampires are well known for their incredible ability to heal from wounds made by standard weaponry so that makes perfect sense. You could slash him with a sword, lash him with a whip, but unless you use some enchanted or powerful weapon he'll heal and keep coming.

Let's not forget the fact in the original Castlevania game even when you killed Dracula he would come back to life for another go at you. You had to kill him like three times before you actually defeated him for real. He was a tough son of a gun to kill.
