Gotta agree with both of you on this... cheese grits only with fish.  I don't 
even think they're obligatory then, though.  I like 'em just plain with butter 
even when I'm eating them with fish.  

Dang, I just had a big delicious dinner, but this talk about grits is making me 
want some.  Guess that'll be tomorrow's breakfast!  :-)

    The only way to eat grits is with 2 eggs over easy, bacon and crisp toast 
slathered in butter. You spoon the grits over the eggs and chop/stir them 
together. Add salt and pepper to taste. 
    One uses the toast to hem in the grits and eggs so that they can be scooped 
up properly. 
    As one eats the grits and eggs, one takes an occasional bite from the 
bacon. 
    Human kind has been eating grits in this manner since the dawn of time.

    When I first arrived in Florida in 1969 (I was born and raised in 
California) I had heard of but had never seen or tasted a grit. Of course they 
were on nearly all of the breakfast menus around Tampa so I had to try them. I 
thought they looked like cream of wheat but tasted like wallpaper paste, I put 
sugar and milk on them to make them more palatable. Only recently have I 
developed somewhat of a taste for them but I only care for cheese grits 
preferably with jalapenos.

    By the way, I use quick grits primarily because they are the only kind 
Wal-Mart carries up here.  Other stores don’t even know what grits are.

     

    As for the Yogurt, it does two things:  First it brings out the sharpness 
of the cheese.  Second, it makes the grits creamy somewhat like butter does but 
at a fraction of the calories.  As I get older and my metabolism slows, I have 
to be increasingly careful about my caloric intake.  I sometimes believe I can 
gain wait on a 2000 calorie diet.

     

    By the way, yogurt can be a reasonable substitute for sour cream or crème 
fresh in most recipes.  I can get away with low fat yogurt.  It must be 
unflavored however.  Vanilla will NOT work except in sweet recipes.

      You don’t have to be mean!  I am a missionary here up north trying to 
bring them some Southern culture.  I will have you know that after 12 years at 
my church, many in the congregation had finally learned to say “Ya’ll.”  Even 
better I educated them to the finer things in life like cheese grits.

      P.S.  I am actually pretty famous for my cheese grits up here.  I have 
developed a heart healthy version that is pretty decent.  If anyone is 
interested, here it is:

       

      I c quick grits

      4 cups water

      2 heaping table spoons of minced garlic (jar OK)

      1 teaspoon of habañera hot sauce (Texas Pete or LA hotsauce OK as 
substitute)

      1 package (8 0z.) of Seriously Sharp (Cabot) cheese

      1/3 cup of plain yogurt

       

      Bring water, garlic, and hot sauce to rapid boil.  Add Yogurt and return 
to boil.  Slowly add grits stirring constantly then reduce heat to very low.  
Cover stirring about every minute until grits are cooked.  Slick and add cheese 
until melted.
