I understand that its impossible to keep everything 100% synced up, and
I'm absolutely not complaining about anything.  But I'm wondering if
there isn't something or somewhere I should be looking at on my system
to make sure I'm looking at all the latest repositories?

I've tried 'emerge sync' a few times to see if I get a more recent
portage snap-shot; same story.

It looks to me like it's not *resolving* that hostname. In which case, I'm surprised that `emerge sync` works.
What happens when you try to `ping ftp.jedsoft.org`, `ping yahoo.com` &c..?
