I use TeXShop, but have also been known to dabble in TeXworks (the
latter is a cross platform clone of TeXShop, which is Mac only). Once
the Gregorio specific engines are installed (in either TeXShop or
TeXworks) then the work flow is very well streamlined, allowing near
instantaneous feedback on changes.
