Can't vouch for the 31 and 41, but the 81 was definitely an upright cabinet. Everything in our DC with "IBM" on it was tall except the 3174 controllers. Had a little NCR 10000 minicomputer sitting in the corner that you could trip on if you weren't paying attention. Couldn't miss the "big blue" stuff.

The first one I ran was VM/SP with an OS/VS1 guest. I don't remember if we migrated to MVS, but I don't think so. The other one I ran was VM/SP only. So 4331 and 4341 were "counter height" but 2-3 units long and the 4381 was a 1 unit upright? I contracted to help a neighboring site recover their CICS install, someone had deleted all DLIBS. They had a small 4300. I'd said we could do it in a day, until I saw how slow their tape moved.
