It is easy to see how this could grow to more than one book! I can see a couple things that might be worth expanding.
In chapter 4, it might be worthwhile to add Guest LAN and Hipersockets to the "Connecting Interfaces" section. I think it would also be useful to make some reference to Pass-Through somwhat like you suggest for VTAM. Chapter 6 should probably touch on PROP as the rudimentary automation tool included with z/VM. There could also be sections to introduce included tools like VMUTIL. Someone already mentioned inclusion of HCD.
