Very similar to our situation. At 7.04 we had a memory leak requiring a reboot every 3 days. Now we have random freezing and IIS that serves the images (same server) died the other day - no error just stopped responding. No SSL. Latest 7.05HF2, Imail databases, 50,000 users with between 2-10,000 actively using the web interface on a given day. KWM latest with patches with no html customization and we do run declude anti-spam and most of our users route mail based on some rules we supply them for spam. Under 6x we were rock solid to the point of forgetting the server was even there. At this point, I regret upgrading, the users who were asking for the few improvements are worth keeping vs the problems.
