I use Postfix right now and I love it.  Finally a email server for unix with
no complicated configuration files that look like punctuation explosions.
It takes 5 min to install and configure if your familiar with Linux/Unix.
Its free and updated constantly.

If you really need a configurable/stable SMTP server, dust off an old
Pentium or PII and get it running.
