desktop-to-desktop is the really the best way, since sender and receiver 
have to agree that they're going to encrypt and what they're going to 
use.  Eudora can use a free PGP plugin.  I guess Lookout 2000 can, too.

If it was lawfirm-server-to-lawfirm-server, then SMTP/TLS would 
transparently move the mail across internet encrypted, but it would not be 
encrypted server-to-desktop.  But I bet the lawyers can't assure all their 
correspodants' mail servers support TLS, so desktop-to-desktop is about it.
