Adaptec 2400A ATA RAID supports 128 mb ECC cache, and 4 ATA masters. about $300 for the board and $50 for the 128 mb memory. And you can use 40 mb, 7200 rpm ATA drives for $100, much cheape than SCSI drives. Do this at least for the IMail spool+log directory, which is really where the read/write traffic jam is worst. There�s a good probability that an incoming SMTP messaging will be written to the cache, and the deleted from the cache as it is moved to the mailbox file, without ever touching the spool disk.
