Assuming you're using the IMail AV add-on from Symantec... Personally, I check Windows' Event Viewer. In the Application Log, it shows SYMScan as the source. Look for the blue Information icons, Event ID 105. That will tell you "The CarrierScan Server has updated its virus definitions." If the date is more than a few days old I manually update using LiveUpdate to make sure. Otherwise, I have a scheduled task to download definitions.
