RewriteManifestsSparkAction created its replacement-manifest output with `table().io().newOutputFile(...)`, which returns a plain `OutputFile`, so overload resolution selected the plaintext `ManifestFiles.write` and `writeDeleteManifest` variants. We now obtain an `EncryptedOutputFile` from the table's encryption manager instead, matching `SnapshotProducer.newManifestOutputFile()`.
