I'm brainstorming here, so sorry in advance if I send you too much mail. I know Dries Buytaert personally; I meet him several times a year. Dries Buytaert is responsible for Drupal and Acquia. Dries has plenty of experience with GSoC projects. Just yell if you want me to get you in touch with him. I think he'd be very interested to have iText as a PHP module in Drupal. In that case, we'd probably have to use another license, because the MPL isn't compatible with Drupal's GPL.
