Hi Sue: You can corn your own beef if you like - it is just a form of pickling. Here, while you can get cooked corned beef in tins, it mostly comes in plastic bags that contain the corned beef (pickled but not yet cooked) and enough of the pickling brine to keep it good until the consumer buys it and cooks it. You can buy it in any supermarket and some butchers also make their own. To cook, you open the bag and put the piece of beef in a large pot of boiling water and boil/simmer until done. Then of course the water contains a fair amount of salt plus a few spices and some highly diluted pickling brine. That's why you can't really make a good soup with it - too many flavours that don't go with regular soup recipes.
