I made a lovely corned beef this week and a friend kindly gave me her Grandmother's recipe for a mustard sauce made from the water. This water is no good for soup and is often thrown out. The original recipe belonged to Isabella Beatrice Chalmers SAWYER (1875 - 1970 Ballarat, AUS) who later became Mrs. STEVENS.

The mustard you use needs to be hot and in Australia (and I think the UK) the best one is old fashioned Keens mustard powder.

Mustard Sauce:-

In a mixing bowl place
- 1 desert spoon mustard powder
- 1 big desert spoon corn flour
- 5 heaped desert spoons sugar
then
- beat in 1 egg
add
- half a cup of vinegar
- 3 quarters cup of corned beef water
Heat till thickened but do not boil as it will curdle.
