I know you're already aware of the README warning (I appended below for
other to see).

But, it sure looks to me like you're running into the warning in that 5th
paragraph,
where is states:
"Only after you have used 'dasdfmt', can you then accept the DASD
Module Parameter Setting using the 'Accept' button. If you were
'Accept'ing unpartitioned dasds, YaST would not recognize
partitions, and you had to restart the installation process."

I don't see any partitions in your displays.
What does "cat /proc/partitions" show??

(SLES8 README)
YaST2 does not yet support to display unpartitioned dasds in the
'DASD Module Parameter Setting' dialog.

If your dasd is not yet partitioned, please load the dasd module
using the 'Load Module' button in the dialog but do *not yet* push
the 'Accept' button.

Note: you can check if the dasds are partitioned, by issuing 'cat
/proc/partitions' after login via ssh to the installing machine. If
the dasds are partitioned, there is no need to use dasdfmt and
fdasd.

When the module is loaded and the dasds show up in the dialog, create
an ssh connection to your installing machine. Prepare the dasd for
partitioning using the 'dasdfmt' command and do the partitioning
using the 'fdasd' comamnd. These commands are described in the
'Device Drivers and Installation Commands' manual,
/docu/lnuxdd02.pdf on CD1.

Only after you have used 'dasdfmt', can you then accept the DASD
Module Parameter Setting using the 'Accept' button. If you were
'Accept'ing unpartitioned dasds, YaST would not recognize
partitions, and you had to restart the installation process.

Note: if you partition the DASD, you're free to either choose the old
ldl low level format and have just one partition (no need to fdasd
then), or to choose the new cdl low level format and add partitions
with fdasd afterwards (reccomended, we suggest you also to have a
swap partition as well).

This attempt I removed the small disk I intended to use as SWAP.
So, just the 2 big disks.

My VNC desktop shows "No automatic proposal possible. Please specify
mountpoints manually in the 'Paritioner' dialog."
And under the Software heading: "Not enough disk space even for a
minimal installation!". When I go select the disks and what
goes on them, they appear in the Partition section but the
Software section still says not enough space and I can get no
further.

I'm beginning to suspect my SuSE CD's. The local branch had a hard
time getting the real things and send me some labeled "not for
resale". Hmmm...
