If you are using alternatives it is good to see if you have already more and 
maybe add this 1 to it:

alternatives --config java

I listed /usr/bin/java and got:

I listed /etc/alternatives/java and got:
[root@REDWINGZ bin]# ls -al /etc/alternatives/java
lrwxrwxrwx. 1 root root 68 Aug  4 14:13 /etc/alternatives/java ->
/usr/lib/jvm/java-1.8.0-ibm-1.8.0.6.10-1jpp.1.el7.s390x/jre/bin/java

Instead of breaking the current link hierarchy, should the link command
you suggested be changed to something like?:

ln -s /opt/ibm/java-s390x-80/jre/bin/java /etc/alternatives/java
