As for the imap settings, never used it - but likely you might have to
recompile imap giving a different path.

You can have postfix (or exim) deliver directly to maildirs in whatever
folder you want (hence what I said abt local delivery transport)

Postfix wants a FQDN'd machine. But I suggest you make it example.com
instead.
