I think the - option, as in

man - somepage > fileorprinter

will do it. It tells man not to use nifty screen stuff. Alternatively, you
may be able to set your terminal type to TTY. If you do this, man will
render underlining by a backspace and underscore, and do bold by backspacing
and overtyping. It's how man output used to get done in the days before
laser printers.
