Personally I'd love to see LinuxConf here in Chch, and would try twist my employers arm to sponsor / assist in whatever way.
Tait's new campus has some public conference facilities (which are available for hire), but I don't think they are big enough for linuxconf. I can't commit my employer to anything, but add my name to the list of the willing, and I will try wrangle whatever I can.
