You don't have to run grub, the way you did LILO in order to register a
change. Just edit the grub.conf file. You can put as many OS's as you
like in Grub, including multiple versions of the same OS, but the
grub.conf entries for Windows requires a different setup than others,
since you have to chainload into the Windows boot process.

Mixing CentOS and Ubuntu is definitely not a problem, as long as you
don't try to share the binaries between them. Differences in things like
what's where in the /etc directory tree mean that the binary versions of
CentOS and Ubuntu won't be looking in the same place for the resources,
and that's enough cause for trouble right there.
