My opinion is that a 400 level presentation should have nothing OOTB.
Default web parts/the xml gui tool/etc would be more suited to a 2-300
level "overview" course.

Things I'd like to see are more focused around tight and deep
integration with a theoretical third party system.  For example, using
the MOSS search engine as an integrated index for the system, and how
you would do this using the object model (for both administration and
runtime).
