At the risk of turning this into a computer thread and having everyone start 
squawking that we should take this to a computer forum, my only comment is 
that I also held off installing SP3 until about a month ago.  To set up the 
situation, I downloaded IE-7 about a year ago (along with Outlook 2007) and 
both have been running flawlessly. I finally got sick of the update thingie 
reminding me I had SP3 to download so I said the hell with it, bit the 
bullet and downloaded and installed it.

Guess what?  I couldn't tell the difference and other than the fact that it 
shows up in the Control Panel in the add/remove section, you'd never know it 
was there. Absolutely no deleterious effect on the functioning of any 
programs, including IE-7.
