One way to offset that is to have biweekly meetings, so even if one were
to miss 50% of the meetings it would still provide the same or better
attendance :)

I like the idea of the pub crawl; I think once the expectation of
variety is set people will know to check and read ANNOUNCE. It's the
occasional changes that are confusing since no-one expects...
