I use Siri quite a lot and can help.
Yes, you do hold the home button down as if you were using the standard voice 
control.
As to commands you can say:
Text message to: contact, e.g text message to Lewis Crack.
Call: contact, e.g call Lewis Crack.
Email to: contact.
Text my wife to tell her i will be late.
What is today's weather?
What time is it?
What time is it in Sydney, Australia?
What time is it in Paris, France?
What time is it in Canada?…etc.

they are just a few of the commands that can be used.
Note: one must keep the button held down whilst they are speaking. When they 
hear a sort of middle-pitch 2 beeps, one can start talking. When one releases 
the key, a higher set of 2 beeps is heard, followed by the response of Siri.
If a low beep is heard, this is when voice activation has become deactivated 
for some reason, usually when the user holds then lets go of the button without 
talking.
