A good archive of how-to's can be found at http://www.linux-on-laptops.com/apple.html. Unfortunately they don't list the 5300/1400 because they are nubus based, and there isn't much support in the linux community for that. A fairly recent usenet posting talks about 5300 support (http://groups.google.com/groups? q=Linux+Powerbook+5300&start=10&hl=en&lr=&ie=UTF-8&oe=UTF -8&safe=off&scoring=d&selm=3E8A3C5F.8030109%40mindspring.dot.com&rnum=12 ) .
If you want to go low end PPC, you would be best going with a minimum of a 2400/3400, linux wise. You'll be able to do the graphics specs the model is rated for. PPC distro's are currently SuSE, Yellowdog, Debian, Mandrake, and a handful of others. Yellowdog, and SuSE are fairly easy to use/install, and most distro's give you the option of which Window Manager (Gnome, KDE, etc...) you want to use.
