Secondly, I think I heard about a program called Wish I were which can modify the gestalt ID to fool installers, could anyone put any truth to this? I know it can be used on 68k machines in conjunction with a PPC upgrade to install OS 8.5 / 9.
This won't help you with Linux. It's not installing that's the problem, it's the actual hardware of the machine. To run LinuxPPC (ie Yellowdog) on a 1400 you'll need the Nubus machine kernel from http://nubus-pmac.sourceforge.net/ . IIRC there's no support for Ethernet, but PCMCIA has just been added, so you could use an addon network card.
