My computer at work is also a G3/350 (blue/white). I run OSX (10.2.8
right now) on it, and have little trouble. You wouldn't be happy running
processor hogs like iMovie or GarageBand, but for getting work done?
No problem. As others have mentioned, the Unix underneath OSX is a
FreeBSD variant even if Apple switched the default shell from tcsh to
bash starting with 10.3.

If you just want to use it as a server, either NetBSD or YellowDog
should be fine. You could also install OSX and turn off Aqua by
typing ">console" at the login prompt. For desktop use, KDE & Gnome
aren't much/any faster than Aqua on OSX (although you can use a lighter
desktop to make the system more snappy).
