I run a Q605, IIci and 7300+G3/500 on NetBSD, and all serve in production capacities. I would be careful of /macppc 2.0, though, as that had some ugly bugs -- either use the bleeding edge -current or wait for the next formal release. 1.6.x works great, though.
NetBSD 2.0 has some memory usage problems with m68k Mac machines. NetBSD 1.6.2 on m68k is rock solid, though, as is 1.6.2 on macppc machines. 2.0 on macppc is pretty solid (I'm running it on two colocated machines), but a few bugs have needed to be fixed since 2.0 came out, but nothing big.
I have an Amiga 1200 running 1.6.2 which is colocated which has not crashed at all since I colocated it here in Los Angeles, even when it was pushing 50 gigs of traffic a day for several weeks. NetBSD 1.6.2 on m68k Macs is as stable (if not as fast) as 1.6.2 on Amiga, since most of the source trees overlap, anyway. Highly recommended for stability.
As for PowerMacs, I have three PowerMacs running NetBSD 1.6.2 in various places. One is colocated, and has served 5.5 terabytes over the course of 1/2 a year without a problem until one of the hard drives failed (it's still running, but it's been rebooted). The other two are acting as IPv6 / NAT routers, also doing backup DNS and email. One of those has been up for 1/2 a year, the other for 2/3 of a year with no problems.
