Truck drivers call that "floating" - and good drivers do it all the time. With non-syncromesh transmissions it is actually the fastest way through the gears, if the driver doesn't miss. It pretty easy with a syncromesh transmission because the transmission blocks the shifter from allowing the shift into gear until the speed matches.
